Triggered abilities are triggered by an activated ability, what does the stack look like?

Simply enough, I have a Viscera Seer and a Solemn Simulacrum on the field. I activate Seer's ability, and as a cost, sacrifice the Simulacrum. Simu triggers. How does this resolve? Am I able to choose to Scry 1 then Draw?

No, you don't get to choose. The triggered ability will always go on the stack after the activated one. When a triggered ability is triggered it is generated as an object, but doesn't go on the stack immediately. Instead, it goes on the stack right before players would receive priority.

In this case, Solemn Simulacrum is triggered while you're in the process of activating an ability (specifically when you pay costs). No one has priority while a player is in the process of activating an ability or casting a spell. Instead the triggered ability will have to wait to go on the stack until you would receive priority again, which is immediately after the activated ability is finished being activated

Yes the scry gets added to the stack, then the draw trigger, the draw resolves first.
