Cards like Stonecoil Serpent states it has protection from multicolor, does this mean it's protected from everything multicolor including creatures, instants, sorcerys, or abilities from a multicolor source?

The see what effects any protection ability covers, you can use the acronym DEBT:

  • D - Damage
  • E - Enchant/Equip
  • B - Blocking
  • T - Targeting

Stonecoil Serpent's protection ability will protect it from 1) Damage from a multicolored source, 2) Enchanted or equipped with a multicolored permanent, 3) being Blocked by a multicolored creature, and 4) being Targeted by a multicolored spell or ability.

It might be useful to cover what protection won't stop.

It can be destroyed or take -X/-X effects from things that don't target it, so Kaya's Wrath or Ruinous Ultimatum will still destroy it.

It's not immune to things multicolored cards have its controller do, so Doom Foretold can make you sacrifice it.

The damage-prevention part of protection can be circumvented by cards that stop damage prevention, so if your Serpent blocked a Leyline Prowler (not the other way around, because protection would stop Leyline Prowler from blocking Stonecoil Serpent) while they also had Questing Beast in play, your Serpent would still take damage and get killed by the deathtouch effect.
