Rolling Thunder in game night set has, "you choose among any number of targets." Where ever other set has "target creature and or players." Doesn't this mean two different things?

Looking for red or green Instant with x in mama cost that can target anything.

The templating has changed since they adjusted the Planeswalker redirection rule that could redirect "damage to target player" to a Planeswalker of that target player. So effectively nothing actually changed, except the templating and it still hits the same things. For reference, note how the templating of Lightning Bolt has changed as well.

All cards function according to their Oracle text on gatherer.wizards.com, which matches the Game Night printing. This is a slight functional change to the card, as you can now hit multiple planeswalkers controlled by the same player, or a planeswalker and their controller. As sergiodelrio mentioned, this was a change implemented when they got rid of the planeswalker redirection rule in Dominaria. New cards that deal damage to "target player" (like Firesong and Sunspeaker) can only hit a player, but older cards (like Lava Spike) have been updated to hit either, to maintain functionality from before the rules update.
