Could I use Rings of Brighthearth to copy the ability of Evolving Wilds ?

Yup.

You aren't adding mana to your mana pool and it is clearly an activated ability. So you are cleared for take off!

Yes. A "mana ability" is defines as an ability that adds mana to your mana pool. Sense the evolving wilds doesn't actually add any mana, you should be good to go on the copy.
