Responding to Ulamog the ceaseless hunger

When my opponent casts Ulamog, the Ceaseless Hunger and chooses to exile my 2 creatures, can I still respond with a spell such as Sheltering Word to save those creatures?

Yes. Ulamog's on-cast ability targets, and targets must be chosen when the ability is put into the stack. When you get priority to respond to the ability, you'll know its targets and will be able to play around that knowledge.

Note that Sheltering Word only gives one creature hexproof. The other creature will still be exiled unless you shield it somehow. As long as at least one of Ulamog's ability's targets are legal, the ability will resolve and do as much as it can with the legal targets.

Another quick note: Ulamog doesn't resolve until AFTER his ability finishes, so any enter the battlefield triggers/effects won't happen until after the ability resolves. An example is Suture Priest: If Ulamog exiles suture priest, the opponent won't lose life because the creature isn't on the battlefield when ulamog resolves (it's in exile).
