Responding to Crypt Champion's Second ETB

If I cast Crypt Champion without paying red, can I sacrifice Saffi Eriksdotter targeting it before it dies, or am I not able to respond before it goes to the graveyard

You're always allowed to respond to a triggered ability (starts with "when/whenever/at") before it starts resolving. Crypt Champion has two separate triggered abilities, so they're separate objects when they're put onto the stack and they'll resolve independently of each other, with a space in-between to take an action.

You can get a "loop" going with these two cards because of the interaction. Champion enters, and you stack the triggers so that it returns something first. After that happens, you activate Saffi Eriksdotter before Champion's sacrifice trigger resolves. It does, he comes back, you stack up the triggers so that he brings back Saffi before being sacrificed. Use the infinite loop of creatures entering and leaving the battlefield to make some other card win you the game (Blood Artist, etc.).
