If I slap Pariah on a Phyrexian Obliterator, would the source of the damage be Pariah, which would cause me to sacrifice permanents?

The source never changes; if Pariah said "whenever you're dealt damage, Pariah deals that much damage to enchanted creature" then the source would be Pariah, but in this case Pariah's ability is a replacement effect that simply alters where the damage goes, not where it comes from.
