If my opponent does the oops all spells combo, but I Angel's Grace to respond to the Azami, Lady of Scrolls ability. Do they die? Does nothing happen? I need to KNOW!

You're delaying the inevitable for 1 turn.
The opponent's library is empty now, and they have Azami, Lady of Scrolls and Laboratory Maniac out. He taps one of them to draw a card, but win the game instead. In response you cast Angel's Grace. Because Laboratory Maniac's replacement effect replaced the opponent actually drawing a card, they do not lose the game. They merely must wait for the following turn to start to attempt to draw a card again and win off Lab Maniac.
