Nykthos, Shrine to Nyx and Legend Rules...

My side of the board: If I have an untapped Sol Ring or Mana Crypt in play, or four extra lands untapped and a Nykthos, Shrine to Nyx in play and one in my hand - I have not yet played a land this turn.

Can I use the sol ring to tap and activate my Shrines devotion ability to generate whatever mana I can - dump the mana into my pool then play my other shrine (picking the tapped Shrine to sacrifice to the graveyard and repeat the process with my new Shrine?

This will work. Once generated, the mana stays in your mana pool until you spend it or until the step/phase ends and your mana pool empties.

When your second Shrine enters the battlefield, you will get to choose which one to send to the graveyard (note, it is not sacrificed--there are some areas that distinction might matter). You will choose to send the tapped one to the graveyard, keeping the one that just ETBed. Since there is no prohibition on you activating the second Shrine, you can tap that one for mana as well.
