Do tokens produced with Mirror Mockery

Count torward devotion until The end of turn?

Yes - copy effects copy the mana cost of a creature (or other permanent) amongst everything else printed on a card. As long as you control the token created by Mirror Mockery, it will contribute to your devotion.

Note that the token is exiled at the end of combat, not at the end of turn. Although copy effects also copy the mana cost of the copied object (and will therefore affect your devotion to certain colors), the token will be gone before your second main phase begins. You'll need to have an instant, a card with flash, an activated ability, or an ability that triggers during combat in order to benefit. The devotion increase will also temporarily affect God cards' static ability until the end of combat.
