Kess, Dissident Mage and Adventures...

Kess, Dissident Mage and Fae of Wishes in the graveyard. Can I cast the sorcery side of FoW, and then later cast it as a creature?

You cannot cast Granted off Kess

Rule 716.4: "In every zone except the stack, and while on the stack not as an Adventure, an adventurer card has only its normal characteristics."

MTG Wiki further explains: "An adventurer card is a creature card in every zone except the stack, as well as while on the stack if not cast as an Adventure.[9] Ignore its alternative characteristics in those cases. For example, while it's in your graveyard, Giant Killer is a white creature card whose converted mana cost is 1. It can't be the target of the triggered ability of Mystic Sanctuary.

Fae of Wishes is only a creature in the graveyard, Kess can't see the Sorcery half

Kess, Dissident Mage allows you to cast an instant or sorcery spell from the graveyard. This means you can move any card from the graveyard to the stack, as long as the resulting spell is an instant or sorcery. You are allowed to cast Granted from Fae of Wishes being in your graveyard, or cast Flamethrower Sonata  Flip from Torrent Sculptor  Flip being in your graveyard. Because Fae of Wishes goes on an adventure when Granted resolves rather than going to the graveyard, you'll be able to cast it later rather than being permanently exiled by Kess, Dissident Mage's ability.

I would have gotten this wrong because I forgot some of the details of the rules changes added for Throne of Eldraine. Here are the important rules that back up what Neotrup is saying:

601.3e Some rules and effects state that an alternative set of characteristics or a subset of characteristics are considered to determine if a card or copy of a card is legal to cast. These alternative characteristics replace the object’s characteristics for this determination. Continuous effects that would apply to that object once it has those characteristics are also considered.

716.3a When casting an adventurer card as an Adventure, only the alternative characteristics are evaluated to see if it can be cast.
