If I play Emrakul, the Aeons Torn, and someone taps Karakas to return it to my hand, but I play it again, do I take one extra turn or two extra turns?

You would only take one extra turn. The Emrakul ability triggers for the next turn and the next turn only. Not for two or more extra turns. Just how playing Time Walk twice in a turn would cause you to only take one extra turn

Multiple extra turns do "stack up" on top of each other. You get 2 extra turns.

It doesn't matter in this particular situation but just so you know in case it comes up: the most recently created extra turn will be inserted right after the current one, i.e. in your example you'll take the 2nd extra turn you created first, and then the 1st extra turn you created after that. This is really only relevant if one or more of the extra turns has something unusual going on (Savor the Moment, Final Fortune, etc.).

To clear up any confusion, here's the relevant rule:

500.7. Some effects can give a player extra turns. They do this by adding the turns directly after the specified turn. If a player is given multiple extra turns, the extra turns are added one at a time. If multiple players are given extra turns, the extra turns are added one at a time, in APNAP order (see rule 101.4). The most recently created turn will be taken first.

"APNAP order" = Active Player, Non-Active Player order. The active player (the player whose turn it is) takes the given action first, then if anyone else needs to do something it goes around the table in turn order.
