How do Stoic Angel and Dovin Baan Interact?

If a player controls a Stoic Angel and then activates Dovin Baan's third ability, how many permanents and what type of permanents will their opponents be able to untap during their untap steps?

Up to two permanents will untap on each opponent's untap step (depending on if they have two permanents to untap) and up to one can be a creature (depending on what the two permanents chosen to untap are and if there is a creature to untap at all).
