Helm of Possession targetting a creature I won, but do not control.

Let's say I play Gilded Drake and take my opponent's Iona, Shield of Emeria. I then use Helm of Possession, sacrificing Iona to take control of Gilded Drake.

What happens if I untap Helm of Possession? I believe it would check who controlled the creature last and return it to their control, correct?

The second question is when Helm of Possession becomes untapped... does it use the stack?

When multiple control-changing effects are trying to apply to something, only the most recent one wins out, but it doesn't make the older ones disappear completely. When the effect of Helm of Possession ends, the Gilded Drake in your example will return to your opponent because the older effect from the Drake itself will start applying again.

When Helm's effect ends, the creature it's controlling will be returned immediately. There's no space to make responses in-between the Helm untapping and the creature going away.
