Helm of Possession and the stack

I have a tapped Helm of Possession that I used to take a creature. During my untap step, I untap my Helm of Possession. Can I sacrifice the creature I took with Helm of Possession before my opponent regains control of it?

No, you won't be able to do that. The control-changing effect ends immediately when Helm of Possession becomes untapped. Since this is still during your untap step, you aren't allowed to take any actions. If you want to sacrifice the creature and untap the Helm then you need to make the sacrifice before your turn starts.
