Heir of Falkenrath in combat

So say Heir of Falkenrath Flip is attacking and gets blocked by a creature without flying or reach. In response to the block transform HoF to its flying side. What happens?
If a creature is blocked, giving it evasion afterwards will not change that retroactively. In fact, nothing in the game will change retroactively due to new events.
The latest point at which you can transform HoF so that it cannot be blocked by ground creatures is the end of the Declare Attackers step.

First of all, you can't respond to a block, only cast spells and activate abilities after blockers are declared. This rephrasing alone is very helpful in understanding what's happening.
Abilities such as Flying determine whether a creature can be blocked by other creatures when it's time to declare blockers. Once declared, blocked creatures are blocked and won't become un-blocked if their blockers were destroyed, or they gained an ability such as Flying. You may still activate the ability to give the creature flying for other purposes (auch as dodging a Magmaquake).
You can of course activate the ability and transform your creature at the beginning of combat before declaring attackers (transforming doesn't cause the creature to change zones, so it won't have summoning sickness and therefore will be able to attack) or after declaring attackers to get the effect you want.

A creature only only not block a flying creature during the declare blockers step, changing the creature to have flying after the fact will alter nothing.
