Fleecemane Lion against Celestial Flare with a dash of Selesnya Charm

A little different than the last question but same principle. If i had a monstrous Fleecemane Lion on the board and an opponent attacks with two creatures, i block with my Fleecemane Lion , the opponent casts Celestial Flare , would i then be able to cast Selesnya Charm for a 2/2 vigilant knight to block the other creature and sac the 2/2 knight in response to the Celestial Flare

You've already declared blockers for the combat, so you can't declare the 2/2 knight as a blocker. The game has moved past that point.

You may sacrifice the Knight to Celestial Flare when it resolves; not "in response" to it.

Blocks are declared simultaneously, at the beginning of the declare blockers step. Your last opportunity to make a token with Selesnya Charm that will be available for blocking is during the declare attackers step.
