Epochrasite & it's abilties

If I use Epochrasite to attack, can I use 4x-greater-gargadon's ability to to 'sacrifice' it before it 'dies'?
Also does the +1/+1 counters stay with it even after it suspends? I'd think no...

Yes, you can. The Gargadon's ability is something you can do at instant-speed, so any time you have priority. So if you send Mr. E. Pochrasite into a battle and realize he's doomed, you can sac him to the Gargadon as soon as you realize it (any time before combat damage is dealt, essentially).
You CAN'T have him deal damage and then sac him - damage is all dealt at the same time, so he'll be put in the graveyard (and thus exiled) by state-based actions before you can use the Gargadon's ability. You don't have a chance to sac him "on his way" to the graveyard if he dies from damage, in other words.
And no, his counters won't stay with him from suspend to suspend. When it gets exiled, it's treated as a completely different card from last time.

Yes, any creature may be removed from combat at any time before the combat damage step, and you can also use this strategy to block as well, blocking and then sacking before the attacker kills it.
And no when a creature leaves play it loses all it's counters.

Now if I assign him as a blocker, sack him before the attacker kills him, does the attacker still get through and damage me?

No. Once a creature is declared as blocked, it's blocked no matter what.
If it has trample, it gets to deal all of its damage to you (as opposed to all minus 1 or 3 damage, depending), so keep that in mind. But other than that, blocked is blocked.
