Elite Arcanist and The Copy

If I have an Elite Arcanist on the field and I exile Lightning Bolt . Do I have to cast the copy and if I don't cast it what happens to the copy? Can I cast it anytime or just when I activate the Ability?

You choose to cast the copy when the activated ability resolves. If you choose not to cast it, nothing happens. You can't 'save' the copy to cast it later whenever you like.

You can only cast the copy of the spell as part of the resolution of the ability. If you choose not to cast the copy when you use the ability the copy will go away the next time state based actions are checked.

Elite Arcanist says "you may cast", so you don't have to. The copy is created in exile. If you choose not to cast it, it stays there and ceases to exist when the ability is fully resolved. You can cast the copy only when you activate the ability (you won't be able to "store" multiple copies of Lightning Bolt /any other instant and cast them later).
