Does Crackling Doom Kill Soldier of the Pantheon?

For some reason I just cannot grasp what happens. I know the Soldier of the Pantheon has protection from multi colored but Crackling Doom targets the player so it shouldn't matter right?

If Soldier of the Pantheon is the only creature on the battlefield when Crackling Doom resolves, you must sacrifice Soldier of the Pantheon . However, you will still gain one 1 life when Crackling Doom is cast.

i think it's important to note that Crackling Doom says "each opponent" it doesn't target anything

Yes, you are right. Protection does not prevent sacrifice, and it does target the player, not the creature.
