Do I have to cast Dragon's Approach in order to use the exile effect?

This is regarding the new Strixhaven card, Dragon's Approach and specifically whether it is required to cast it first in order to use the exile effect or if at any given point, 5 copies of the card are at the graveyard, I can use it?

You have to cast it. The optional exiling bonus is part of the resolution of the spell.

Abilities that trigger from or can be activated from a zone other than the battlefield specify in the wording of that ability from which zone it can be used. Ex. Bloodghast triggers from the graveyard, and Govern the Guildless can be activated from your hand.

Yesterday is correct for most non-edge cases, but technically you only need to resolve the spell, rather than cast it.

If, for example, you were to copy the spell on the stack (with say, Fork ) when the copied spell resolved, you'd also have the option to exile the copy -and four cards named Dragon's Approach from you GY- to get the effect.
