Do I get to draw a card if Stone Haven Outfitter dies and it is the only equipped Creature and the only copy of itself on the field?

If I have one Stone Haven Outfitter on the field, it is equipped, and it dies, do I get to draw a card?
What about if I had two copies of Stone Haven Outfitter on the field when the equipped one dies? Do I get to daw two cards?

Yes to both. "Dies" triggers are a special kind of triggered ability. They use the board state immediately before the triggering event to see what triggers.
