Copying Non-Legendary Token

If I have Miirym Sentinel Wyrm out and cast a legendary dragon I would get a non-legendary token of that dragon.

Now if I were to cast a copy spell (cursed mirror, glasspool mimic, etc.) can I target the non-legendary creature token, and would the non-legendary carryover to the copy entering?

Yes, it will. A token's copiable characteristics are the ones it was created with. Because the token is not Legendary, any copies of it will also not be Legendary.

Also, copy effects take into account the special effects of other copy effects that the object being copied is already subject to. For example: if you use Phyrexian Metamorph to copy a Runeclaw Bear, any copy of that copy will also be an Artifact.
