Convoke and Persist.

Ok. Lets say you want to play a card with convoke like Stoke the Flames. You have a card with persist on it like Safehold Elite and a sacrificing creature like Viscera Seer. Can I tap safehold, sac it, tap it, and so on?

Nope.

Convoke is a way to pay for a spell. When you cast a spell, you first declare that you are casting it and put it on the stack, then pay its costs, including mana cost. You cannot activate abilities such as Viscera Seer's activated ability as you are paying costs.

and even if you were using an ability that you could activate while paying the spell's cost(like the ability on Phyrexian Tower, persist is a triggered ability, and can't resolve until after you've cast your convoke spell
