If Lightning Strike targets Cartel Aristocrat can the Aristocrat sac a creature to protect itself from Red? does its ability hit the stack?

Cartel Aristocrat has an activated ability that does use the stack. You may sac a creature and declare pro red although you won't have pro red until the ability is allowed to resolve . There is nothing stopping your opponent from putting a second Lightning Strike on the stack and kill Cartel Aristocrat but other than that it works the way you have described it.
