canceling an artifacts ability?

Could Cancel cancel the ability of a card like Elixir of Immortality? Not playing it as its being put into the battlefield, but as the ability itself is being used

No. Cancel specifies that it counters a spell. Something is only a spell while it is on the stack, and activated and triggered abilities are not considered spells. In order to stop activated abilities, you would need something like Stifle.
