Can I play Grasp of Darkness in response to them playing a pump spell?

If my opponent plays a pump spell like Giant Growth on let's say a Vexing Devil can I in response while Giant Growth is still on the stack play a Grasp of Darkness to kill the Vexing Devil before the Giant Growth resolves?

Yes. When a player casts a spell, each player will be given priority to make a response before it resolves. An instant-type spell like Grasp of Darkness can be cast any time you have priority, which means you can use it to make a response in this situation.
