Can creatures with shroud be equipped?

No, shroud prevents targeting and the equip ability targets.

Just to supplement with the rules for equip:

702.6a Equip is an activated ability of Equipment cards. “Equip [cost]” means “[Cost]: Attach this permanent to target creature you control. Activate this ability only any time you could cast a sorcery.”

As Gidgetimer said, shroud prevents targeting, so you won't be able to target a creature with an Equip ability since it effect is to attach to target creature you control.

I just thought of another interpretation of your question. If an equipped creature gains shroud the equipment will not fall off. Only the ability to initially attach targets.

There are some instances that get past this, anything that doesn't target with its ability would work. Quest for the Holy Relic can get around this, because it doesn't target. Fumble Armory Automaton Stonehewer Giant are interesting examples of ways to put equipment onto creatures with shroud.
