Ashen Rider works on Emrakul, the Aeons Torn. Emrakul has protection from colored spells, but the thing that's targeting Emrakul in this case is an ability, not a spell. Things like Utter End will not work, but Ashen Rider, Nekrataal or Suspension Field will.

Yes. Emrakul, the Aeons Torn may have protection from colored spells, but Ashen Rider's ability is what targets. Also, all cards chosen with Show and Tell are put onto the battlefield simultaneously. Abilities that trigger as a result of those permanents entering the battlefield will be put onto the stack the next time a player receives priority, so any of the new permanents would be a legal target for Ashen Rider's ability.
