Blood-Chin Rager Vs Polymorphists Jest

What happens when i attack with a Blood-Chin Rager and Polymorphist's Jest is casted? Can is be blocked, assuming that there is only one creature that can block.

After Polymorphist's Jest resolves each creature controlled by the target player is a 1/1 frog with no other types. So Blood-Chin Rager's ability will not apply to them since they are not warriors.

But didn't the Rager ability resolve before the Polymorph? So doesn't it still see it as a warrior?

Depends on when the Jest was cast. The rager ability is a triggered ability that is triggered by him attacking. Once he is is declared as an attacker, the ability goes on the stack.

If the opponent casts Jest in response to the ability (before it resolves), the jest will resolve before the rager and turn everyone into frogs. Only then will rager's ability be able to resolve, but it will see only frogs and do nothing.

If the opponent casts the jest after the ability has resolved, the Jest will work ok as well - all creature become frogs and the Rager's ability applies only to Warriors. So, creatures will be able to block the frogs as normal.

In any case, they will become 0/1 creatures, so whether you block them or not will most probably not be an issue.

How a resolving one-shot effect applies to objects depends on exactly how it works. If it changes characteristics (color, abilities, P/T, etc.) then the group of objects it applies to is locked in as it resolves. Otherwise it changes the rules of the game, and the group of objects it applies to can change as the game state changes.

Blood-Chin Rager's triggered ability changes the rules of the game. If creatures lose the Warrior type after it resolves then it will stop applying to them, and if creatures gain the Warrior type after it resolves then it will start applying to them.
