How does Battlefield Thaumaturge and Curse of the Swine interact with each? does it make it just UU to target unlimited creatures?

Yes. Battlefield Thaumaturge 's ability effectively cancels out with Curse of the Swine 's X because each is based on a 1:1 ratio between targets and mana. Put simply, choosing an additional target would normally cost 1 more, but Battlefield Thaumaturge 's ability reduces that 1 to 0.
