Arixmethes, Slumbering Isle vs Quirion Druid

if I have a Arixmethes, Slumbering Isle and my opponent has a Quirion Druid Can my opponent take away my Arixmethes, Slumbering Isle or atleast his power?

Not sure what you mean by "take away" Arixmethes, but if Arixmethes, Slumbering Isle is currently a land then your opponent can use Quirion Druid to turn it into a 2/2 creature.

Even if Arixmethes still has slumber counters on it, it will get turned into a creature in this example because the effect from the Druid that makes it a creature has a newer timestamp than Arixmethes' own ability making it a land. If all the slumber counters are removed then Arixmethes will stay a 2/2 because the Druid's effect changing the P/T has a newer timestamp than the printed P/T.

Okay, thats what I meant. by using Quirion Druid you could stop Arixmethes, Slumbering Isle from being a 12/12 and him only be a 2/2.

Yes, that's right. Arixmethes would just be a 2/2. Keep in mind that your opponent would have to activate Quirion Druid while Arixmethes still has slumber counters. If there aren't any counters left then Arixmethes isn't a land anymore and won't be a legal target for the Druid's ability.
