Does Angelic Overseer have Hexproof and Indestructible in the graveyard if I control a human?

No, Hexproof only applies to permanents and players. Indestructible only applies to permanents.

The effect of Angelic Overseer means "The creature that is represented by this card has Hexproof and Indestructible if you control a Human."

Tylord2894 I know they have no effect in the grave but wouldn't it still have those abilities? Creature spells with flying still count as having flying in the grave.

No, it would not have those abilities in the graveyard. Is there a specific interaction where this matters? Perhaps I can better explain it through such an interaction.

If I control Cairn Wanderer with Overseer in the grave.

Current abilities called Characteristic-Defining Abilities (CDAs) function everywhere. Lord of Extinction has a P/T CDA. Other than CDAs, the traits of a card very rarely change. The effect of Angelic Overseer grants the creature that it represents on the battlefield those abilities, but it does not change the text nor abilities of the actual card.
