If Academy Rector dies while Teysa Karlov is in play, would you get two enchantments off of rector?

No. Academy Rector will trigger twice, but you can only exile it from your graveyard at most once. If you exile it to find an enchantment on the first resolution, it won't be in your graveyard to exile on the second resolution.
