Ok, I get that you use wizards to draw and I know a few of the combos therin, but how does the deck actually win?
Laboratory Maniac is my main win con. but i also have some infinite mana combos to Blue Sun's Zenith everyone and theres always Psychosis Crawler + Enter the Infinite.

Laboratory Maniac in the deck plus Azami, Lady of Scrolls, and Mind Over Matter in play = Win

Everyone here pretty much said it. Laboratory Maniac is my secondary win con, however. My Primary win con is to get infinite mana with Deadeye Navigator + Palinchron and Blue Sun's Zenith my opponents' libraries +1.

Thanks for the help. It's just odd to me to build because it's hard to comprehend her being a tier one commander when she has little in the way of defensive bodies. Wizards tend to be small creatures so I always feel like I'm going to get hated off the board. This is what I've come up with so far:
Azami, Lady of Beatin' Yo A**
Commander / EDH*

Infinite mana combos, Laboratory Maniac, Mind Over Matter I'll see how it plays out.

Also, she has such an advantage of card draw, plus she bypasses the "summoning sickness" rule by not using the symbol. If you check out my deck, I run about 28~ various counter spells because with the consistent card draw, I can draw into an answer to protect my wizards until I win.

Palinchron isn't a wizard either. With all the card draw Psychosis Crawler can whittle down life totals fast, and if you go infinite on a Blue Sun's Zenith it ends the game.

The_Dragonmaster hit the nail on the head.
The best-built Azami decks play hard control with a sort of "Oops, I win" infinite combo in the form of Mind Over Matter drawing your entire library and casting an entirely unstoppable Laboratory Maniac for the win. Beyond that combo, there's not much the deck requires in terms of win conditions. Heavy control elements with a dash of wizard tribal is your best bet.

So is there even a purpose to building other win-cons in? Like infinite mana = infinite draw or the Psychosis Crawler at all? I like the idea of having multiple ways to win instead of relying on finding Mind Over Matter to ensure I get the win in a timely manner. I think my deck has a good balance, but we'll see. I just have no experience with this type of deck yet.

Having more than one win condition is good in case someone removes a threat before it can become one.

Forcing a mass-scoop is also a win condition, in my black book.
Knowledge Pool + Teferi, Mage of Zhalfir creates one of the hardest locks ever.
Infinite mana + Capsize would make me want to scoop too.
And after all that, if your opponent still doesn't scoop, just start swinging away with your 1/1 and 2/2 wizards.

Forcing a mass scoop is what my Zedruu the Greathearted deck does. :P I considered Knowledge Pool but without Teferi, Mage of Zhalfir it's useless, the other win-cons in the deck are good on their own without being part of a win-con, so if I need them and don't have all the pieces I can sacrifice them and wait for another combo to set up.

Azami is a simple beast. The key is to abuse draw power to eventually draw into Mind Over Matter. mind over matter with azami allows you to cycle through your entire deck to grab Temple Bell or any card you need for that matter. When i ran her in the competitive scene she would come down around turn 2 and I was able to win by turn 3 most games turn 4 was a definite win. The trick is you run like 4 utility wizards. The rest is control or combo pieces or ways to get combo pieces.

My friend uses Laboratory Maniac as his main win condition.
