The order is this. You activate Abyssal Hunter and his ability goes on the stack. The opponent responds with Rend Flesh killing your hunter, but his ability is still on the stack. If no other abilities are played Abyssal Hunter resolves, tapping the targeted creature and doing 1 damage to it. Although it is not specified on gatherer, I'm basing my answer on the fact that his ability works very much like Champion of Wits'

Use Champion of Wits’s power as the first ability resolves to determine if you want to use the ability and how many cards you draw if you do. If you use the ability, you discard two cards regardless of how many cards you draw. If Champion of Wits leaves the battlefield before that ability resolves, use its last known power. (2017-07-14)

In that sense if Abyssal Hunter's power was different from 1, say he died from Last Gasp he wouldn't do damage at all, but would still tap the creature.

How does this work, say I have a Abyssal Hunter I tap it to hit an opponents creature then he removes my Abyssal Hunter do I still get to use the abitlity or does it just not happen? Thanks
