Indulgent Aristocrat and sacrificing

If I declare lets say an Insolent Neonate as a blocker to a non trampler, then sacrifice it using Indulgent Aristocrat before combat damage, does the attacker still count as blocked?

Can I sacrifice the said Insolent Neonate right after it gets targeted by any spell like Fiery Temper so I get the counters before it gets burned/removed etc.

The attacker will be blocked, and you can respond to Fiery Temper by sacrificing it. Note that you can't both sack it to the Aritocrat AND itself. Just in case you had that question.
