Can you sacrifice/exile a blocker if attacking creature must be blocked?

The situation is as follows.

My opponent plays a Goldenhide Ox targeting his Humbler of Mortals with the 'must be blocked' ability.

I am obliged to block so I do so with my Nyx Weaver . Can I assign it as a blocker and then exile it with its ability before damage?

Yes you can. Once blocking is declared the Humbler of Mortals is considered blocked for the remainder of the combat phase regardless of what happens.

You could exile Nyx Weaver to its own ability, however the entire power of the Humbler of Mortals will trample over since it would have triggered at the same time giving all of their creatures trample.

You can, but note that Goldenhide Ox will trigger Humbler of Mortals 's constellation ability, which means that Humbler of Mortals will have trample until EOT. If you exile Nyx Weaver , all of Humbler of Mortals 's combat damage will be assigned to you (although you'll still get the ability from Nyx Weaver ).
