When (and how) do you target triggered abilities?

Example 1: I have Greater Auramancy and Cathars' Crusade in play, my opponent has Panharmonicon in play and plays a Meteor Golem . Can he destroy my Greater Auramancy and then my Cathars' Crusade with the Meteor Golem ´s double triggered abilities?

Example 2: I have Aegis of the Gods in play. My opponent has Warstorm Surge in play and uses Balthor the Defiled ability to get let's say 10 creature back from his graveyard to play. Warstorm Surge then triggers 10 times dealing different amounts of damage. Can he target one of the triggers at Aegis of the Gods (killing the creature) and then the rest target them at me?

In the first example, your opponent won't be able to target Cathars' Crusade with either trigger. In the second example, they won't be able to target you with any of the Warstorm Surge triggers.

If a triggered ability has targets then the targets have to be chosen at the time the ability is put onto the stack. In your examples, the shroud granted by Greater Auramancy makes Cathars' Crusade an illegal target when it's time for your opponent to choose targets for Meteor Golem 's triggers, and likewise the hexproof granted by Aegis of the Gods makes you an illegal target when it's time to choose targets for Warstorm Surge 's triggers.
