What happebs when you Soul Separator a Quicksilver Gargantuan?

I have a Grizzly Bear on the battlefield. I activate Soul Separator targetting Quicksilver Gargantuan , getting a 7/7 Black Zombie and having the other token copy the bear. What are the characteristics of the token?

Right, sorry. I thought you were just asking about the P/T part. It will be a 7/7 green Bear with flying named Grizzly Bears that costs . When you apply the copy effect of the Gargantua's own ability it will overwrite the results of the copy effect that created the token.

The bear token would not have flying, as Gargantuan's own ability overwrites the copy effect creating the token--thus, with the copy effect overwritten, the flying portion of the copy effect is overwritten as well.

Wow. I 100% thought I typed "without flying" in that last post. I guess this just wasn't my question to answer.

The token will be 7/7. The official Oracle text of Quicksilver Gargantuan and a few other similar cards were updated slightly within the past couple years to make sure they work in a way that makes sense in situations like this. Now it just says "...a copy of any creature on the battlefield, except it's 7/7".
