What counts as Casting- Or, Artisan of Kozilek Shenanigans

Basically, Artisan of Kozilek triggers on cast. Is returning it from the graveyard to the battlefield with something like Apprentice Necromancer considered "casting" the card, or is the ability to return something just return the thing without casting it?

My assumption is the latter, as part of the definition of casting is "paying a cost", but it is unclear if this cost has to include the permanent's mana cost. Essentially, when returning a creature, does the CREATURE go on the stack, or is it just the ability that returns it?

You are correct.

Putting a creature on the battlefield does not count as casting the creature spell. It's an activated ability that's being put on the stack and resolving.

Unless you're casting the creature spell from your hand, or you're resolving an ability that specifically instructs you to "cast" or "play" the creature in it's text, than you're not casting it.
