If I have 2 Stinkdrinker Bandit in play and my rogues attack, do both trigger and give the +2/+1 (making +4/+2) buff even if one is killed in the blocking phase?

In the Gatherer Rulings, it says this:

An ability that triggers when something "attacks and isn't blocked" triggers in the declare blockers step after blockers are declared if (1) that creature is attacking and (2) no creatures are declared to block it. It will trigger even if that creature was put onto the battlefield attacking rather than having been declared as an attacker in the declare attackers step.

So if the game moved to the Declare Blockers Step, the effect "this creature gets +2/+1 until eot" is put onto the stack twice for each unblocked Rogue.

As effects on the stack exist independently from their source, these effects will resolve even if your opponent then kills one of your Bandits. So yes, your unblocked Rogues will get +4/+2.

The last possible time to kill a Bandit to avoid making your creatures stronger is after you declared attackers, before you move into the Declare Blockers Step.
