Tap while attacking ruling question

So, this always comes up around our gameroom where lets say i attack with Courser of Kruphix and they block with say Elvish Mystic or Birds of Paradise (whatever that has a tap ability, they say they will block with Birds of Paradise and tap it, so somewhat it cancels the battle cuz its blocked and his creature is tapped so nobody takes damage and his creature DIDN'T die.

I know for a fact that this doesn't work, how will i explain this? >_< the scenario goes like

Courser of Kruphix attacks

opponent blocks with Birds of Paradise

(already declared blockers)

activate Birds of Paradise ability (tap for mana)

they say it doesnt die cuz it already blocked it then they remove it from combat by tapping it or some weird "stuff"

End results is what surprised me:no damage taken AND birds of paradise doesn't die

they were referencing to the ruling like Celestial Flare

Can someone explain this, and try to cite them from comprehensive guide or something, Thanks alot for responding :)

Tapping or untapping a creature thats already been declared as an attacker or blocker doesnt remove it from combat and doesnt prevent its combat damage.

Whether something is tapped or untapped does NOT matter if it is participating in a battle. The blocking creature can be tapped and untapped multiple times, the attacker or blocker can gain flying after blockers are declared, none of these thing matter.

If blockers are declared, those creatures are considered blocking forever, unless they somehow exit combat (usually via a regeneration effect or a Cloudshift effect). Tapping is not equal to exiting combat:

506.4b Tapping or untapping a creature thats already been declared as an attacker or blocker doesnt remove it from combat and doesnt prevent its combat damage.

509.1g Each chosen creature still controlled by the defending player becomes a blocking creature. Each one is blocking the attacking creatures chosen for it. It remains a blocking creature until its removed from combat or the combat phase ends, whichever comes first.
