Subtypes, Is an Elder dragon still a dragon?

I was curious as through looking through creature cards that said Dragon, sure simple its a dragon. But what about other types of dragons? Like Nicol Bolas for example is an "Elder Dragon" and Niv-Mizzet, Parun is a "Dragon Wizard", does that mean both are still dragons, but also are Elder and Wizard subtypes?

Yes, that's what it means. Each word in a creature's subtype is a separate creature type. Any effect that cares about one of those types will count it.

You are correct - Nicol Bolas has both the Elder and Dragon subtypes; Niv-Mizzet, Parun has both the Dragon and Wizard subtypes.

For your reference, here are the rules:

Rule 205.3a A card can have one or more subtypes printed on its type line.

Rule 205.3b Subtypes of each card type except plane are always single words and are listed after a long dash. Each word after the dash is a separate subtype; such objects may have multiple types. Subtypes of planes are also listed after a long dash, but may be multiple words; all words after the dash are, collectively, a single subtype.

Example: “Basic Land — Mountain” means the card is a land with the subtype Mountain. “Creature — Goblin Wizard” means the card is a creature with the subtypes Goblin and Wizard. “Artifact — Equipment” means the card is an artifact with the subtype Equipment.
