Subira, Tulzidi Caravanner and Sword of the Animist

If you equip Subira, Tulzidi Caravanner with a Sword of the Animist can you still pay to make her unlockable or is she now considered to be a power 3 creature?

No, you cannot pay to make her unblockable. Her first activated ability states "another target creature". If her ability could be used on herself, equipping Sword of the Animist would give her 3 total power and she would be an ilegal target for that ability.
