Show and Tell and clone/copy effects.

Scenario: I cast Show and Tell and my choice (without my opponents knowing) is Omniscience. My opponent (unbeknownst to me) chooses Clever Impersonator. We put our choice onto the battlefield.

The gatherer page says "After all choices are made, the cards are put onto the battlefield simultaneously." So, does this mean my opponent can have Clever Impersonator (or any clone/copy effect) come in as a copy of Omniscience (or any permanent being put in by Show and Tell)?

Remember to always check Gatherer entries for a card, each card has a clever FAQ for the most common questions related to it. From the Gatherer entry on Clever Impersonator:

If Clever Impersonator enters the battlefield at the same time as another permanent, it can’t become a copy of that permanent. You may choose only a nonland permanent that’s already on the battlefield. (2014-09-20)

No, a Clone-style creature being put onto the battlefield with Show and Tell can't copy other objects being put onto the battlefield with that Show and Tell.

The choice for Clever Impersonator and other similar cards is made right before it actually enters the battlefield, otherwise it would enter as a 0/0 and die. This means that in your example, Omniscience isn't yet on the battlefield when it's time for your opponent to choose something to copy. They'll have to choose something else that's already on the battlefield.
