Sacrificing Hangarback Walker to Barter in Blood

Can I sac Hangarback Walker and then its token to satisfy Barter in Blood?

Nope. It is a single effect on the card, so you will need to sac' two creatures simultaneously. The gatherer page explains the ruling pretty clearly. If it read "each player sacrifices a creature, then repeats this process" or "each player sacrifices a creature, then sacrifices another creature", it would work as you say.

Just a follow up question, would sacrificing Hangarback Walker and then its token to Eater of Hope work? Or would you similarly have to sac 2 creatures simultaneously.

Same kind of answer. Anything that uses a number as part of a cost or single effect will have all costs paid or targets affected simultaneously. Both creatures that you're sacrificing to Eater of Hope's "destroy" ability will need to be sacrificed simultaneously.

Anything on a separate line of text on a card will happen in a separate steps of the resolution of that card. For example, with the "command" cycle of Dragons of Tarkir block, the modes that you choose will resolve in separate steps, and not simultaneously (though priority is not passed as the spell is resolving, so there is not opportunity to cast spells or activate abilities). However, they will always resolve in the order that they are printed on the card.

Also, I was wrong in my first post about the different wording on the card mattering. Hangarback Walker's death trigger would go on the stack, but would not resolve until the original spell is done resolving. No other spells or abilities will begin resolving during another spell's resolution.

Note that Hangarback Walker's triggered ability would not even be put on to the stack until Barter in Blood is finished resolving.

This is because triggered abilities can occur even when no player would have priority and these triggers wait to go on to the stack until any player would receive priority, which is immediately after the spell resolves.
