Sacrifice interactions Mikaeus, the Unhallowed vs Teysa, Orzhov Scion

Mikaeus, the Unhallowed gives undying to my non-Humans. I sacrifice a creature to an ability. Before the ability starts to resolve undying triggers. My opponent in response kills Mikaeus. Will Undying Fizzle because when it tries to return to the battlefield it no longer has Undying?(I know there are a bunch of cards that perform a check before and after resolving. This is the only case You might see for undying).

I also have Teysa, Orzhov Scion on the battlefield and I'm sacrificing a black creature. Which causes her ability to trigger. Can My opponent kill Teysa to stop me from getting my Spirit?

Once an ability has triggered, there's nothing a player can do to "go back in time" and prevent it from triggering. The only way to stop it is to counter it somehow, either by making all its targets illegal (if it has any) or using an effect that can specifically counter it (Stifle, Summary Dismissal, a couple other things).

In your examples the creature with Undying will still come back (all that matters is that it had Undying at the time it actually died), and you'll get a spirit from Teysa.

No one is preventing a Trigger or countering. So I think you are confused about my question.

They have to kill Mikaeus before the undying triggers go on the stack. Sacrificing things as a (additional) cost to activate an ability happens instantly, so as soon as you sacrifice the creatures, the undying triggers go onto the stack immediately. Anything your opponent does to Mikaeus after that does not affect that, and the creatures will be brought back as the triggers resolve.
