Ruling for a beginner

My opponent has Agent of Fates on the battlefield and then casts Gift of Orzhova and in response I play Voyage's End targeting Agent of Fates.
What happens? Agent of Fates returns to his hand 1st and his Gift of Orzhova goes into the graveyard because it has no creature to attach to?
What if he has another creature on the battlefield, can he just target the creature that I had not removed?

No, a spell's target won't automatically change if something happens to the original target. The only way to change a target is with an effect that specifically says it changes a target.

Yup, your card resolves first and since his gift of orzhova has no legal target it goes to the graveyard.
