Regarding swapping power and toughness and burn spells

I'm looking at Mannichi, the Fevered Dream for this example. Let's say that I have an opponent attacking me with a 4/4 creature and I only have Mannichi on the board and don't want to lose it.

Can I cast a burn spell like Lightning Bolt to burn the 4/4 for three then swap its power and toughness to make it a 1/4 and block it without losing a creature?

No, you cannot. Whenever damage is dealt to a creature, whether through a burn spell or through combat, it does not actually change the creature's toughness. Damage is marked on creatures, and if it isn't enough to kill them, it falls off at the end of the turn. A 4/4 that has been Lightning Bolted is just that - a 4/4 with 3 damage marked on it. Swapping the power and toughness would yield the same result as it would still be a 4/4 with 3 damage on it.

...and then there's the thing that Mannichi's P/T gets switched as well, being 2/1 until the end of turn, which wouldn't survive a 1/4 either. ;)

Ah yes, "each" though it's a question just in general for this situation. Especially since playing on the PS4 game actually just shows a change on the power and toughness on the card until the clean-up phase.

Playing on MTGO or PS4 or other online games tend to "subtract" the damage from the toughness of the creature, but this is only to represent the damage already marked on it. It doesn't actually mean the creature's toughness has been lowered at all.
